CHAPTER ONE: THE SMASH

Not just a burger. This is a SMASH BURGER

A smash burger starts as a ball of beef and ends as something you will think about for the rest of the week. The ball goes onto a very hot griddle and we smash it hard right away, so the meat lies flat against the metal. That is where the edges caramelise into a dark, crispy crust, while the inside stays juicy.

Then comes the build: a soft brioche bun, our UF sauce, house pickles and red onion jam. It sounds simple because it is simple. The hard part is stopping at one.
